Coorong Mullet have a unique flavour that lends itself well to many recipes. A soft, moist texture and high in omega 3. Coorong Mullet are very good value for money.

Available: Best between April - Dec. Harder to get Dec - March.

Mulloway - (Argyrosomus holopidotus)

The flesh of the Coorong Mulloway is moist and in large flakes.  It has low oil content and a mild but distinctive flavour. Large fish are normally presented as cutlets and small fish are sold whole or as fillets. It is a medium priced fish.

Available: Mostly warmer months between Nov - May.

Golden Perch - (Macquaria ambigua)

Goldern Perch

This freshwater fish has a mild, light and delicate taste.  It has a moist medium firm texture which holds it’s shape when cooked.  It is prized in Chinese cuisine for presentation as a steamed dish.

Golden Perch is a medium- high priced finfish.

Coorong Pipi (Donax deloides)

Pipi

These are surf cockles harvested from the beach off the Younghusband Peninsula.  Sand is removed in a purging process in certified foodsafe premises.  They have a medium to strong flavour and a firm texture. 

Previously known as Goolwa cockles, Pipis add an interesting touch to your menu.

Available: 1st Nov - 31st May (Subject to closed season June to Oct).

Greenback Flounder - (Rhombosolea taparina)

Greenback Flounder

The Coorong Greenback Flounder has a more delicate flavour than other flounders, with low oil content and a medium texture. They generally have a delicate to medium flavour and their unusual appearance suits them exceptionally well to presentation which makes them extremely popular in restaurants.

Available: Mostly warmer months between November - April.

Redfin - (Perca fluviatilis)

Redfin

An intorduced species that is very popular for those that don't like saltwater fish.  Redfin has a medium to firm texture with a low oil content. The flesh is sweet and dry.

It is suitable for steaming poaching and frying The fish is best filleted and skinned before cooking.

Available Carp - (Cyprinus carpio)
Carp

European carp have a strong, sweet flavour and are inexpensive to buy. They can be cooked either as fillets or whole but have small bones that can be difficult to remove. The firm to medium texture and low oiliness of these finfish make them suitable for steaming, poaching and frying. 

A popular eating fish with the Jewish and Asian communities.
